  • Origin of the grape variety: The Passerina grape variety derives its name from the small size of its berries and the fact that sparrows show a particular fondness for its
    grapes, which are characterized by particularly tasty flesh. It is widespread in the Marche and Abruzzo regions.
  • Alcohol content: 12.5% ABV
  • Soil: Medium mixture – limestone
  • Altimetry and exposure: Altitude and exposure: 432 m.a.s.l.
  • Age of vineyards: 15-20 years old

  • Grape harvest: Manual
  • Vinification: Grapes are harvested by hand in mid-September when the grapes have an acid content that ensures freshness to the wine. Fermentation is conducted at a controlled temperature. Maturation at the end of fermentation on good lees causes the wine to acquire complex and important tones
  • Sight: Straw yellow with greenish reflections
  • Smell: Delicate floral bouquet of lilac, honeysuckle and acacia
  • Taste: Fruity, citrusy aromas, pleasantly acidic.
  • Food and wine pairing: Raw fish, fried foods, salami, risotto and medium-aged cheeses
  • Serving temperature: 9-11°C
